Use
- Cold emulsion: dissolve the sugar ester in the oil phase.
- Cold emulsification: the addition of gum is usually necessary to stabilize the emulsion. We recommend adding 0.2 to 0.5% xanthan or guar gum to the aqueous phase. The aqueous phase is poured into the oil phase with vigorous stirring and continued stirring for 5 minutes.
Solubility
- Insoluble in cold oil, poorly soluble in water

- 3-20% of the total weight of the product
