How to do it?
Pour the beans into a large bowl and cover with enough water, let it stand until the next day.
The next day, drain the water and prepare approx. 1.5 liters of cold water. Blend the beans in water to a smooth paste.
Boil 5 liters of water in a pot until it boils, stir in the mixed beans and let it boil. You will get foam on the surface, collect it. After about 10 minutes, remove and let rest for 10 minutes, then bring to a boil again. After boiling, set aside and drain through a cloth. The substance - okara - is soybean meal suitable, for example, for meatballs. Heat the resulting soy milk, dissolve 8 teaspoons of nigari in 2 dcl of water and add to the milk. Add in parts and always mix thoroughly, as your milk starts to curdle, you don't need to add nigari anymore.
Let it rest for 10 minutes and you can collect the precipitated protein or strain it through cheesecloth. It is a good idea to load the plate thoroughly and let the tofu press for about 1 hour, or use a mould. And homemade tofu is here!
